Pancakes: No dairy, no gluten, no grains, almost no effort!

100% natural seems to be the “in” thing these days. So does gluten-free, dairy-free, low-cal, low-fat…and the list goes on and on. What is a person supposed to eat?

Well, here’s one simple yet delicious recipe for you pancake-lovers out there! Kudos to my wife for this wonderful breakfast creation. Are you ready for the ingredients list? Here goes…

Bananas and eggs.

Seriously, that’s it.

  1. Mash 1 ripe banana in a bowl and then mix in 2 eggs
  2. Coat your pan with coconut oil (or whatever cooking oil you use)
  3. Drop in the batter and cook one side for about 30 seconds
  4. Flip, and cook the other side

Done!

Top it with your favourite mixed fruit, maybe some chopped nuts and enjoy! Here are the nutritional deets:
